Mart Klaas has been working as Chef de Cuisine in Art Priori and Wöse restaurants. Now he opened a burger cafe Viru Burger on the terrace of Viru Keskus. After the radical career change he also intends to tour many major events this summer with his new burger place.
After a career of preparing delicious gourmet dishes Klaas states that the stunning change of direction was caused by a need for change. “Besides, everybody loves burgers,” he chuckles. “I felt that this is the right course for me right now and I even had no need to consider it at length, because entertainment park Park’la invited me to join.”
After working for years as Chef de Cuisine he thinks that his experience gained in top class restaurants can be applied successfully to making fast food as well. “Thorough knowledge of the ingredients and using special techniques adds such value to the finished product that the customer can sense it in the taste,” Klaas thinks. “Of course it all starts from good fresh ingredients, and I never intend to make any concessions on that.”
The menu of Viru Burger includes various fries and burgers, including the very special Scamburger for vegans made with a vegetable patty. “Beyond Meat burger pattylooks, cooks and tastes like a fresh beef patty and lately it has become very popular all over the world,” says the chef. “Its main ingredient is plant protein extracted from peas and it also contains beetroot juice to add the reddish colour characteristic to meat.” For meat lovers Klaas offers also various burgers with beef patties, for example with jalapenos, chilli mayonnaise, maple syrup and bacon, in addition to traditional options.
Klaas maintains that street food is gaining popularity.“I know some other cooks who have worked in top class restaurants, but have lately started serving such simpler food,” he adds. “Thanks to that our street food is getting more interesting and its quality is improving, some very exciting restaurants have been opened.”
You can enjoy Viru Burger food every day in Park’la entertainment park on the terrace of Viru Keskus. In addition Klaas intends to be available in many summer events with his trendy foodtruck.
Entertainment park PARK’la and Viru Burger is open on the 4th floor rooftop area in Viru Keskus from Tuesdays to Thursdays11 am to 11 pm, on Fridays and Saturdays from 11 am to 1 am and on Sundays from 11 am to 11 pm.
